What is Calorie (kilocalorie) (kcal)?

A calorie is a unit of energy. In nutrition contexts, 'calorie' almost always refers to a kilocalorie (kcal): the amount of energy needed to raise one kilogram of water by one degree Celsius. The 'calorie' on food labels and the 'kcal' used in research are the same unit.

The word "calorie" causes routine confusion because it has two meanings depending on the field:

- Lowercase 'calorie' (technical): the amount of energy to raise 1 g of water by 1°C. Roughly 4.184 joules. Almost never used in nutrition.
- Capitalized 'Calorie' or 'kilocalorie' (kcal): 1,000 of the above. The unit on food labels and in nutrition research. When you see "this food has 200 calories," they mean 200 kcal.

The distinction is invisible in everyday English but mathematically important. A 200-Calorie cookie is 200,000 calories in technical SI units. Most non-US nutrition labels use kcal explicitly to avoid confusion.

How calories in food are measured:

- Bomb calorimetry: the original method. Burn a food sample in a sealed chamber, measure the temperature rise of surrounding water, calculate energy.
- Atwater factors: the modern standard. Each gram of macronutrient is assigned an average calorie value based on burnable energy minus excretion losses:
- Carbohydrates: 4 kcal/g
- Protein: 4 kcal/g
- Fat: 9 kcal/g
- Alcohol: 7 kcal/g

Atwater factors are convenient averages, but they are not perfectly accurate for every food. Fiber is often included in carbohydrate count even though most fiber yields little usable energy (the body cannot break it down efficiently). Some food databases now use modified Atwater factors that account for fiber and digestion losses.

The honest framing:

- Calorie counts on food labels carry a 5-20% margin of error due to the averaging in Atwater factors and label rounding rules. The FDA permits up to 20% over the labeled value.
- Net calories absorbed differs from calories consumed. A nutritional label shows total caloric content; the body absorbs slightly less due to digestion losses, especially with high-fiber foods.
- Calorie counting works because it is internally consistent over time, not because each number is exact. A 200-calorie label and an actual 220-calorie absorption are functionally interchangeable across weeks if you're tracking consistently.

Common myths:

- "Calories don't matter": in the long run, they do. The body's energy balance equation drives weight change. Hormones, gut microbiome, and other factors influence where the calories go (fat vs muscle vs heat) but not whether energy balance applies.
- "Some calories don't count": every calorie consumed is part of the energy balance equation. Different foods produce different satiety, different digestion costs (TEF), and different downstream effects, but no calorie is exempt from the equation.
- "Negative calorie foods": do not exist in any meaningful sense. Celery and cucumber are very low calorie, not negative.
